Traditional catalan sweets for this time of the year. As a catholic nation, the tradition is to celebrate “All Saints” on the 1st of November and we eat this sweets, roasted sweet potato and roasted chestnuts. Let your imagination fly and make absolute wonders! Enjoy it!



  • 500g ground almond
  • 125g caster sugar
  • 200g sweet potato (1 medium sweet potato)
  • 2 eggs
  • pine nuts
  • whole almonds
  • whole walnuts
  • greated almonds or nut mix
  • cocoa
  • 3 lemons
  • 2 oranges
  • dark chocolate


  1. Boil the sweet potato. Once it’s cooked, peel off the skin and mash it. Spread it flat in a plate and put it in the freezer so it cools down in a few minutes.
  2. Mix the ground almonds and sugar.
  3. Add the cold sweet potato and 1 whole egg.
  4. Mix everything with a fork or your own hands.
  5. Once the mixture is done it needs to be separated in different parts so we can make different types of panellets.
  6. For example, I made the following types: Pine nuts, lemon with an whole almond, orange with a whole walnut, oranges with coated in dark chocolate, chocolate with a whole almond, greated nut mix.
  7. So I separated the mixture in 3 different bowls. Two small balls for the orange and lemon and a big one for the rest.
  8. For the orange and lemon ones, simply great the lemon and orange rind and mix it with the mixture. (a portion with orange and a different portion with lemon). Then make balls with your hands and place them in baking tray with some grease proof paper. Once done, place a whole almond on each of the lemon ones and a whole walnut on half of the orange ones. The rest of the orange ones remain plain and when they are cold we will coat them with melted dark chocolate that will become hard when placed in the fridge.
  9. For the chocolate ones, just take another portion of the mixture and add a couple of teaspoons of cocoa. Make balls and place a whole almond on top.
  10. For the rest, make balls as well as with the ones above. Then whisk a whole egg in a separate bowl and coat the balls on the egg before coating them on the pine nuts or the greated nut mix.
  11. Place the trays in the oven and cook until it starts becoming a bit brown. (As in the picture)
  12. Leave it to cool down and it’s ready to eat. They will last for a few days in a plastic container.
