Seafood Paella

I am Spanish and I have to say that the paella DOESN’T taste the same when using a different pan. It is a bit of a pain for washing up but that secret taste of a good paella comes from the original paella pan. There are different sizes according to the number of portions you want to make. I used a Kitchen Craft Polished Steel Paella Pan – 40cm
from Amazon to make a 6 portion paella. Perfect when inviting friends over which is what I did last Saturday!

Seafood Paella


  • 1 Carmencita Paellero Paella Spice Mix
  • 600g paella/risotto rice
  • 1 green pepper
  • 1 onion
  • 50g of green beans
  • 2 tablespoons of garden peas
  • 2 tomatoes
  • salt and pepper
  • A box of ready to eat prawns non peeled
  • A box fo seafood mix that includes squid, peeled prawns and mussels
  • 1750ml fish stock


  1. Peel the onions, pepper and beans and put it in the paella pan with 4-5 sprays of olive oil until tender.
  2. Add the garden peas and the tomatoes cut in very small pieces.
  3. Let it fry, stiring if needed.
  4. When all the vegetables are cooked, add the seafood mix and stir it until cooked.
  5. Then we can add the spices and sitr until everything has turned yellow.
  6. Ad the rice and sitir so everything mixes together.
  7. Ad some of the stock until covering the rice and stir.
  8. Bring it to a boil and low down the heat. Stir for the last time.
  9. Keep on adding stock when the rice gets dry, until it’s cook but don’t stir any more.
  10. When we have added half the stock, add the cooked unpeeled prawns to make it look nice.
  11. Once we have added all the stock and the rice is almost cooked, turn off the heat and cover with a humid kitchen towel for 5-10 min.
  12. Ready to serve!
