Peppers, Caramelised Onion and Goat’s Cheese Panini

Peppers, Caramelised Onion and Goat's Cheese Panini

  • 1 mini ciabatta bread roll
  • ½ red pepper / ½ green pepper
  • ½ onion
  • 1 teaspoon of sugar
  • ½ tin of chopped tomatoes or a couple of small-medium tomatoes
  • 1 teaspoon of italian tomato paste
  • oregan
  • Some goat's cheese (2-4 teaspoons)
  • 50g of half fat cheddar cheese
  1. Cut the peppers and onion and steam it in the microwave for 4-5 min in a Lekue steam case or a container with transparent film and some holes on it. Once is ready, keep the peppers and put the onions in a pan with 3-4 sprays of olive oil and add a dash of hot water. Cook at hight heat for 2 min and add the teaspoon of sugar. After 2 min low down the heat and cook for 15-20 min until the onion is caramelised.
  2. While the onion cooks, cut the tomatoes or pour have tin of chopped tomatoes in a pan with 3-4 sprays of olive oil and a pinch of salt. Add the teaspoon of tomato paste and cook for 10 min.
  3. Cut the bread roll in half, spread the tomato in both halfs, add the half fat cheese grated in both halfs, then add the caramelised onion, the peppers, the Goat's cheese and the oregan.
  4. Cook in the oven for 10 min.
  5. Ready!!
