Apple and Kiwi Cake

This low calorie cake is delicious and moist and uses hardly any flour. At only 3 ProPoints per serving it is amazing.

 

 

Ingredients (8 portions):

 

INSTRUCTIONS:

Preheat the oven to Gas mark 4 180 / 150 fan 350 F

Peal 5 apples and the 4 kiwis and cut them in small pieces. Blend it all.

In a large bowl mix the blended fruit with the 2 large eggs, the sweetener and the milk.

Mix the baking powder with the flour and add it slowly to the mix while whisking. Whisk for 3-4 minutes.

Pour into the silicone cake pan (doesn’t need any butter and/or flour to avoid sticking). Cut the last apple in four pieces and make small slices. Cover the cake with the apple slices.

Bake for about 50-70 min.

Check after about 45-50 min check the cake is cooked by sticking a knive on it and making sure it comes out clean. Ā (Please be aware it might not come out completely clean due to the nature of the fruit)

Take out of the oven once it’s cooked. Let it cool down and take out of the mould.

Cover the cake with the jam.

Put it in the fridge and eat after a few hours, once it’s settled and cold.

Cut it into 8 portions (3pp per portion)
